1/2 cup extra-virgin olive oil
3 tbsp red wine vinegar
1 tbsp freshly squeezed lemon juice
2 cloves garlic, minced (or 1/2 tsp garlic powder)
1 tsp dried oregano
1/2 tsp dried basil (optional)
1 tsp Dijon mustard (helps emulsify)
1/2 tsp honey or sugar (optional, balances acidity)
1/2 tsp salt
1/4 tsp black pepper
🥣 Instructions
In a jar or small bowl, combine: vinegar, lemon juice, garlic, mustard, honey, salt, and pepper.
Whisk well (or shake the jar).
Slowly add the olive oil while whisking until the dressing emulsifies.
Stir in the dried oregano and basil.
Taste and adjust seasoning—add more lemon for brightness, salt for flavor, or oil if too sharp.

Toss with Greek salad (tomatoes, cucumbers, olives, feta).
