
Homemade Taco Salad in Minutes

For the Salad Base
4 cups chopped lettuce (romaine or iceberg)
1 cup cherry tomatoes, halved
1 cup canned black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 cup shredded cheddar or Mexican blend cheese
1 avocado, diced
A handful of tortilla chips, lightly crushed
Optional: sliced olives, green onions, jalapeños
⭐ For the Quick Taco Meat (optional but yummy)
1/2 lb (225 g) ground beef, chicken, or turkey
1 tbsp taco seasoning
1 tsp olive oil
2 tbsp water
⭐ For the Fast Dressing
1/2 cup sour cream or Greek yogurt
2 tbsp salsa
1 tbsp lime juice
Salt + pepper to taste
(Mix all together — DONE!)
🔥 Instructions
1️⃣ Make the Taco Meat (5–6 minutes)
Heat oil in a pan.
Add ground meat and cook until browned.
Stir in taco seasoning + water.
Cook 1 more minute until slightly thickened.
(You can skip the meat to make it vegetarian — still delicious!)
2️⃣ Assemble the Salad (3–4 minutes)
In a large bowl, layer:
Lettuce
Tomatoes
Beans
Corn
Cheese
Avocado
Warm taco meat
Top with: crushed tortilla chips for the crunch!
3️⃣ Add Dressing
Drizzle the quick salsa dressing on top.
Toss gently and serve immediately.
