For 4–6 servings:
1 lb (450 g) ground beef
1 medium onion, diced
2 garlic cloves, minced
3 carrots, sliced
2 celery stalks, chopped
2 potatoes, diced (optional but recommended)
1 can (14 oz) diced tomatoes
4 cups beef broth
1 tsp Italian seasoning
1 tsp paprika
Salt & pepper to taste
1 cup frozen peas or corn (optional)
1 tbsp tomato paste (for a richer flavor)

1. Brown the Beef
