1 cup packed brown sugar

For the French toast

 

1 loaf brioche or challah bread, sliced thick

 

5 large eggs

 

1½ cups half-and-half (or whole milk + cream mix)

 

1 tsp vanilla extract

 

1 tsp ground cinnamon

 

¼ tsp nutmeg (optional)

 

Pinch of salt

Make the caramel base

In a saucepan, melt butter with brown sugar and corn syrup over medium heat. Stir until smooth and bubbling. Pour evenly into a greased 9×13 baking dish.

 

Arrange the bread

Lay bread slices tightly over the caramel layer, slightly overlapping if needed.

 

Prepare the custard

Whisk eggs, half-and-half, vanilla, cinnamon, nutmeg, and salt until well combined. Pour evenly over the bread.

 

Chill overnight

Cover and refrigerate for at least 8 hours or overnight to allow the bread to soak fully.

 

Bake

Preheat oven to 350°F (175°C). Bake uncovered for 40–45 minutes until puffed, golden, and set.

 

Serve

Let rest 5 minutes, then invert or scoop to reveal the caramelized bottom. Add toppings if desired.
