
These Oreo Cheesecake Bars have a buttery cookie crust, a creamy cheesecake center, and crunchy Oreo pieces on top. They bake in one pan and chill into neat, sliceable bars.

For the Crust
24 Oreo cookies
4 tbsp (¼ cup) melted butter
For the Cheesecake Layer
16 oz (2 blocks) cream cheese, softened
½ cup granulated sugar
1 large egg
1 tsp vanilla extract
10–12 chopped Oreo cookies
🥣 Instructions
1. Make the Oreo Crust
Preheat oven to 325°F (160°C).
Crush 24 Oreos into fine crumbs (food processor or zip bag + rolling pin).
Mix crumbs with melted butter until evenly coated.
Press firmly into the bottom of an 8×8 baking pan lined with parchment paper.
2. Make the Cheesecake Batter
In a bowl, beat cream cheese until smooth.
Add sugar and mix until fluffy.
Add egg and vanilla; mix until combined (don’t overmix).
Stir in chopped Oreo pieces.
3. Assemble
Pour the cheesecake mixture over the crust.
Spread evenly.
Add a few extra Oreo chunks on top if you want a fun look.
4. Bake
Bake for 30–35 minutes, or until the edges look set and the center is slightly jiggly (not runny).
Cool completely, then refrigerate for at least 2 hours before slicing.
